Spiced Saffron Rice

Cooked rice mixed with spices and powdered safffron

  • 2 Cups Rice Cooked
  • 1 Tsp Cloves
  • 1 Tsp Fennel Seeds
  • 1 Small Red Onion Diced
  • 2 Cloves of Garlic Chopped
  • ½ Tsp Ground Ginger
  • 1 Sweet Corn
  • 1 Medium Green Bell Pepper Diced
  • 1 Tsp Saffron
  • 1 Tbsp Coconut
  • Oil
  • Salt


  • Heat coconut oil in a wok over medium heat.
  • Add cloves, fennel seeds, stir, then add onion and garlic.
  • Add sweet corn, green bell pepper, salt, ground ginger and stir.
  • Add cooked rice, toss to mix well, add powdered saffron, toss till evenly coated and add salt to taste.
  • Saffron rice ready.
  • Serve with tomato sauce.
