Ingredients
For The Scrambled Eggs
- 10 Eggs
- ½ cup Milk
- 1 tsp Salt
- 1 tbsp Margarine
For The Angwa Mo
- 2 medium Onions (sliced)
- 1 kg Rice
- 1 tbsp Salt
- 800 ml Water
Instructions
- Crack all the eggs into a mixing bowl add milk, salt and whisk together .
- Pour the mixture into the frying pan, under medium heat, add a tablespoon of margarine, pour the egg mixture, and scramble the eggs till they brown slightly.
- Transfer the scrambled egg to a bowl and set aside.
- Add your margarine in a saucepan under medium heat then add onion slices.
- Allow onions to caramelize (turn brown).
- Add the rice and salt. Stir and let it sear for a minute then add water stir, and allow the rice to cook for 30 minutes or until the rice is cooked.
- Transfer the scrambled eggs to the cooked rice and stir until evenly mixed.
- Serve with some avocados, pepper sauce, and any choice of protein.
