This is a budget-friendly Ghanaian dish and here’s how we made it;
Margarine Angwa Mo
Equipment
- Mixing Bowl
- Whisker
- Sharp knife
- Bowl
- Saucepan
- Spatula
Ingredients
- 10 Eggs
- ½ cup Milk
- 1 tsp Salt
- 1 tbsp Margerine
For The Angwa Mo
- 2 medium Onions Sliced
- 1 kg Rice
- 1 tbsp Salt
- 800 ml Water
Instructions
- Crack all the eggs into a mixing bowl, add milk and salt, and whisk together.
- Pour the mixture into a frying pan set over medium heat, add a tablespoon of margarine, and scramble the eggs until they brown slightly.
- Transfer the scrambled eggs to a bowl and set aside.
- In a separate saucepan set over medium heat, add margarine and onion slices.
- Allow the onions to caramelize (turn brown).
- Add the rice and salt, stir, and let it sear for a minute. Then, add water, stir, and allow the rice to cook for 30 minutes or until it's cooked.
- Transfer the scrambled eggs into the cooked rice and stir until evenly mixed.
- Serve with some avocados, pepper sauce, and your choice of protein.
