
Kpakposhito Pork
Diced pork cooked with blended pepper,garlic, ginger and served with yam chips

Ingredients
- 1 Pound Pork Belly Diced
- 1 Small Onion
- 1 Tsp Black Peppercorn
- 5 Cloves of Garlic
- 1 Small Ginger
- 1 Tsp Thyme
- 1 Tsp Oregano
- 5 Grains of Selim Hwentia
- 1 Shrimp Seasoning Cube
- 1 Tbsp Vegetable Oil
- 1 Tbsp Salt
For Green Pepper Sauce;
- 1 Petite Belle Pepper Kpakposhito
- 1 Medium Red Onion
- 5 Cloves of Garlic
- 1 Small Ginger
Instructions
- Blend onion, black peppercorn, garlic and ginger into a smooth mixture and set aside.
- Pour diced pork into a saucepan over medium heat, add sliced onion, blended mixture, dry thyme, oregano, salt, grains of selim, stir, cover and let cook for 25 minutes or until soft and tender.
- Blend petite belle pepper, onion, ginger and garlic into a smooth mixture and set aside.
- Heat vegetable oil in a saucepan over medium heat, add cooked pork and stir-fry for 5 minutes.
- Then pour the blended pepper mixture on the pork and stir to coat evenly.
- Add shrimp seasoning, salt, stir and let simmer for 8 minutes.
- Kpakposhito pork ready to serve.
