Tiger Nut Chocolate Chip Cookies

Ingredients
- 200 grams Butter
- 1¼ cup White sugar
- 1 Egg
- 1 Egg Yolk
- 1 tbsp Vanilla Essence
- 1 cup flour
- ¾ cup Tiger Nut Chaff
- ¾ tsp Baking Soda
- 1 tsp Salt
- 150 grams Chocolate Chips
Instructions
- In a saucepan over medium heat add in some butter, allow to caramelize and set aside to cool.
- In a mixing bowl, pour sugar, egg, 1 egg yolk and mix until well combined.
- Pour in the caramelized butter, vanilla essence, flour, tiger nut chaff and baking soda, mix until almost combined.
- Add some chocolate chips and mix.
- Line a baking tray with a baking sheet and carefully scoop the mixture with an ice cream scoop and place them carefully on the baking sheet.
- Carefully space them out to allow the cookies to spread without having to stick with each other.
- Top it up with more chocolate chips and pop into a preheated oven at 180 degrees for 11 minutes.
- Remove and correct the shape with a round cutter.
- Allow to cool down and serve with some tiger nut milk or any other fruit juice of choice.
