Corned Beef Shito

Ingredients
- 1 large onion
- 1 cup ginger chopped
- 1 bulb garlic
- 1 tsp black peppercorn
- 1 tsp anise seeds
- 10 habanero peppers
- 8 green scotch bonnet peppers
- 680 grams corned beef 2 tins
- 1 tbsp curry powder
- 1 tsp rosemary dried
- 3 bay leaves
- 1 tsp salt
Instructions
- In a blender, add onions, ginger, garlic, peppers, black peppercorn and anise seeds, vegetable oil, and blend until smooth.
- In a pot over medium heat, pour in blended ingredient.
- Gently stir and allow to cook for 20.
- Stir occassionally as and when it's needed.
- Once it browns, gently crash your corned beef and, add to your shito and stir.
- Allow to simmer for about 20 minutes stirring frequently to prevent burning.
- Add in the curry powder, rosemary, bay leaves, and salt.
- Allow to simmer for about 10 more minutes and set aside to cool.
- Serve this with any side dish of choice. Enjoy!
