Plantain Moi Moi

Baked chicken moi moi with fried plantain toppinngs

  • 3 cups leftover moi moi mixture
  • 2 small ripe plantain sliced ½ inch thick
  • 400 ml vegetable oil
  • 700 ml water for baking/steaming


  • Pour the vegetable oil in a pan on medium high heat.
  • Add plantain slices and fry for 5 minute, take off heat and set aside
  • Transfer leftover moi moi mixture into a skillet
  • Carefully place the fried plantain on the moi moi mixture covering the surface entirely
  • Fill a baking pan with water and place the skillet in it gently
  • Cover the entire baking pan with an aluminum foil and bake at 180 degrees for 45 minutes
  • Plantain moi moi ready to serve
