
Plantain Moi Moi
Baked chicken moi moi with fried plantain toppinngs

Ingredients
- 3 cups leftover moi moi mixture
- 2 small ripe plantain sliced ½ inch thick
- 400 ml vegetable oil
- 700 ml water for baking/steaming
Instructions
- Pour the vegetable oil in a pan on medium high heat.
- Add plantain slices and fry for 5 minute, take off heat and set aside
- Transfer leftover moi moi mixture into a skillet
- Carefully place the fried plantain on the moi moi mixture covering the surface entirely
- Fill a baking pan with water and place the skillet in it gently
- Cover the entire baking pan with an aluminum foil and bake at 180 degrees for 45 minutes
- Plantain moi moi ready to serve
