
Garden Eggs Appleslaw

Equipment
- Salad Bowl
- Fruit Core Cutter
- Glass Mixing Bowl
- Whisk
- Rubber spatula
- Sharp knife
- Chopping Board
Ingredients
- 3 unit Apples
- 2 tbsp Lemon juice
- 1 cup 3 Garden eggs
- 1 handful of Water leaves (borkoborko)
For the dressing
- ¼ cup Mayonnaise
- 3 tbsp Salad cream
- 1 whole Onion (diced)
- 75 ml Milk (to thin the mayo)
- ½ tbsp Black pepper
- Pinch of Salt
- 2 tbsp Olive Oil
Instructions
- In a mixing bowl, mix the salad cream, mayonnaise, diced onion, milk, black pepper, salt , olive oil , whisk together and set in the fridge.
- Cut the core of the apples and cut into thin julienne slices, add lemon juice and toss to coat and set aside.
- peel and slice the garden eggs, add it to the sliced apples then add the water leave ( borkorborkor) and toss to mix in.
- Garden eggs appleslaw ready to serve
Notes
Kid-Friendly Adaptation: Cook the chicken in broth instead of buffalo sauce. Shred and drain off excess liquid. Put some of the chicken aside for the kiddos (plain, no sauce) and toss the remaining chicken with the buffalo sauce before you broil it.
