
Goat Meat Jollof Rice
Tasty Jollof rice riced made with fried goat meat

Ingredients
- 1 Pound Goat Meat
- 2 Cups Rice
- 5 Medium Tomatoes Puréed
- 1 Medium Onion Puréed
- 7 Scotch Bonnet Pepper Puréed
- 200 g Tomato Paste
- 2 Medium Red Onions Sliced
- 4 Cloves Of Garlic Minced
- 1 Medium Ginger Grated
- 1 Tsp Fresh Thyme
- 1 Tsp Dried Oregano
- 1 Tsp Ginger Powder
- 1 Medium Green Bell Pepper sliced
- 1 Medium White Onion sliced
- 2 Beef Seasoning Cubes
- Oil
- Salt
Instructions
- Pour goat meat into a saucepan over medium heat
- Add Fresh Onion
- Add Ginger
- Add Garlic
- Add Thyme
- Add Oregano
- Add Beef Seasoning
- Add Salt
- Add water,Stir,Cover and let boil for 40 minutes and set aside.
- Heat oil in a saucepan
- Add cooked goat meat,Fry for 5 minutes then take them out of the oil and set aside.
- Add sliced onion to the oil,Stir and let sweat then add tomato paste
- Stir and let simmer
- Add pureed tomatoes, onion, scotch bonnet pepper, stir and let simmer down
- Add ginger powder, garlic powder, white pepper, beef seasoning, stir and let simmer then add fried goat meat
- Add stock, stir and let simmer for 5mins
- Add rice, salt, a bit of water, stir and let cook on medium low heat for 25mins checking on regularly.
- Add green bell pepper, white onion, stir and cover for a minute
- Goat Meat Jollof Rice Ready to Serve.
