
Chicken Wings Smokey Jollof
This chicken wings with smokey jollof can be served with a chilled fruit juice or a glass of wine.

Ingredients
- ¼ cup Kpakposhito
- 1 medium bell pepper Green
- A handful of Basil leaves
- 6 cloves of Garlic
- 1 Ginger small
- ¼ cup Water
- ½ kg Chicken wings
- 1 ½ tbsp Salt
- 5 Tomatoes medium
- 1 Onion medium
- ¼ cup Kpakposhito
- 5 cloves of Garlic
- 1 small Ginger
- 50 ml Vegetable oil
- 1 medium onion (diced)
- 200 g Tomato paste
- 1 tsp Rosemary
- 2 Bay leaves
- 1 tsp Curry powder
- 1½ cup cup rice
- 1 tbsp Salt
- ¼ cup Chicken stock
- 1½ tbsp Liquid smoke
Instructions
- Pour the kpakposhito into a blender, add green bell pepper, basil leaves, garlic, ginger, water and blend into a smooth paste
- Pour on the chicken wings, add salt , stir to coat evenly and let sit to marinate for 30 minutes
- Place the marinated chicken wings in a preheated oven and grill at 180c for 40 minutes
- Heat vegetable oil in a sauce pan over medium heat, add the diced onions, stir until translucent then add the tomato paste, stir and let simmer for 5-7 minutes
- Add the blended tomatoes mixture, stir and let simmer down for 15- 20 minutes then add rosemary, curry powder, bay leaves, stir and let simmer for 3 minutes
- Add the washed rice, salt, chicken stock, liquid smoke, stir and cover to cook for 40 minutes checking regularly
- Add the grilled chicken wings, stir in and let simmer for 5-7 minutes
- Chicken wings smoky jollof ready to serve
