
Ginger Lobster Jollof Rice
So many varieties of jollof we can never get tired of. Yet another one we cannot afford to hide from you, ginger lobster jollof rice... delish!!

Ingredients
- 500 g lobsters chopped
- 1 tsp white pepper
- 1 tsp dried thyme
- 1 tsp curry powder
- 1 tsp salt
- 100 ml shito olive oil
- 1 medium onion pureed
- 100 g ginger pureed
- 2 tbsp tomato paste
- 10 kpakposhito chopped
- 1 tbsp crayfish powder
- 1 tsp 1 tsp curry powder
- 2 cups long grain rice washed
- 1 tbsp salt
- 1 cup coconut milk
- 1 large carrot sliced
Instructions
- Season the lobster with white pepper, dried thyme, curry powder, salt, stir to coat evenly and set aside to marinate
- Heat shito olive oil in a saucepan over medium heat, add the onion puree, stir and let simmer down for 7 minutes then add the ginger puree, tomato paste, stir and let simmer for 5-7 minutes
- Add the chopped kpakposhito, crayfish powder, stir then add the marinated lobster, stir and let simmer for 3 minutes then take out
- Add the washed rice, salt, coconut milk, stir , cover and let cook for 30 minutes
- Add the carrots, lobsters, stir in , cover and let cook for 5 minutes
- Ginger stew lobster jollof ready to serve
