Beetroot Jollof Rice

Delicious jollof rice prepared with blended beetroot which can be served with a glass of fruit juice

  • Blender
  • Sauce Pan (2)
  • Wooden Spatula


  • 2 Cups Long Grain Rice
  • 1 Tsp Fennel Seeds
  • 2 Bay Leaves
  • 1 Medium Red Onion Sliced
  • 5 Tbsp Vegetable Oil
  • 1 Tbsp Salt

For Beef;

  • ½ Pound Salted Beef
  • 1 Small Red Onion
  • 4 Cloves of Garlic
  • 1 Tsp Anise Seeds
  • 1 Tsp Pink Peppercorn
  • 1 Beef Seasoning Cube
  • 1 Tsp Salt, For beetroot Mixture
  • 100 g Beetroot
  • 1 Medium Onion
  • 5 Scotch Bonnet Peppers
  • 4 Cloves of Garlic


  • Blend onion, garlic, anise seeds, and pink peppercorn into a smooth mixture and set aside.
  • Pour salted beef into a small saucepan over medium heat, add blended mixture, beef seasoning, salt, stir and let cook for 15 minutes, then take from heat.
  • Blend beetroot, onion, scotch bonnet, pepper and garlic into a smooth mixture.
  • Heat vegetable oil in a saucepan over medium heat, add fennel seeds, onion, stir and let sweat for 2 minutes.
  • Add blended beetroot mixture, stir and let simmer down for 5 minutes, then add bay leaves, stir and let simmer.
  • Add cooked salted beef, stir and let simmer for 2 minutes.
  • Add washed rice, beef stock, salt, stir and let cook for 25-30 minutes.
  • Beetroot Jollof rice is ready.
  • Serve with beetroot and avocado salad.
