
Beetroot Jollof Rice
Delicious jollof rice prepared with blended beetroot which can be served with a glass of fruit juice

Ingredients
- 2 Cups Long Grain Rice
- 1 Tsp Fennel Seeds
- 2 Bay Leaves
- 1 Medium Red Onion Sliced
- 5 Tbsp Vegetable Oil
- 1 Tbsp Salt
For Beef;
- ½ Pound Salted Beef
- 1 Small Red Onion
- 4 Cloves of Garlic
- 1 Tsp Anise Seeds
- 1 Tsp Pink Peppercorn
- 1 Beef Seasoning Cube
- 1 Tsp Salt, For beetroot Mixture
- 100 g Beetroot
- 1 Medium Onion
- 5 Scotch Bonnet Peppers
- 4 Cloves of Garlic
Instructions
- Blend onion, garlic, anise seeds, and pink peppercorn into a smooth mixture and set aside.
- Pour salted beef into a small saucepan over medium heat, add blended mixture, beef seasoning, salt, stir and let cook for 15 minutes, then take from heat.
- Blend beetroot, onion, scotch bonnet, pepper and garlic into a smooth mixture.
- Heat vegetable oil in a saucepan over medium heat, add fennel seeds, onion, stir and let sweat for 2 minutes.
- Add blended beetroot mixture, stir and let simmer down for 5 minutes, then add bay leaves, stir and let simmer.
- Add cooked salted beef, stir and let simmer for 2 minutes.
- Add washed rice, beef stock, salt, stir and let cook for 25-30 minutes.
- Beetroot Jollof rice is ready.
- Serve with beetroot and avocado salad.
