Tatale Sandwich

Ingredients
  

  • 3 fingers of ripe plantain
  • 3 cloves of garlic
  • 1 tsp cloves
  • 1 tsp ground black pepper
  • 1 tsp dried oregano
  • 1 tsp ground ginger
  • 50 ml water
  • ½ cup rice flour
  • 1 tsp Salt
  • ¼ cup vegetable oil
  • ½ small Cabbage shredded
  • 1 medium tomato diced
  • 1 small Onion diced
  • 200 G canned flaked tuna
  • ½ tsp ground black pepper
  • 2 tbsp mayonnaise

Instructions
 

  • Pour the ripe plantain into a blender, add garlic, coves, ground black pepper, dried oregano, ground ginger, water and blend into a smooth mixture
  • Pour into a mixing bowl, add rice flour, salt and stir in
  • Heat vegetable oil in a pan over medium , scoop a spoonful of the plantain mixture into the pan and fry until golden for 3 minutes on both sides and set aside
  • In a small bowl, mix the cabbage, tomato, onion, flaked tuna, black pepper and mayonnaise
  • Place one portion of the tatale on a serving platter, scoop a spoonful of the cabbage mixture on and topped with another portion of tatale
  • Tatale sandwich ready to be served

Notes

Kid-Friendly Adaptation : Do not use too much pepper when frying the mashed plantain.
