PRAWNS COCONUT PEANUT SAUCE

Ingredients

  • 1kg Prawns, deveined
  • 1 tsp ginger powder
  • 2 cloves of garlic, minced
  • 3 fresh basil leaves, sliced
  • 1tsp freshly ground black pepper
  • 1 tsp salt
  • For the soup
  • 1 cup groundnut paste
  • 1 medium onion, pureed
  • 1 cup coconut milk
  • 200ml water
  • 1 tsp cayenne pepper
  • 1 ½ tsp salt
  • 2 cloves of garlic, minced
  • 1 small ginger, grated
  • 1 red chilli, chopped

Directions

  1. Season the deveined prawns with ginger powder, garlic, basil, black pepper, salt, stir and let sit to marinate for 30 minutes.
  2. Pour the groundnut paste into a saucepan over medium heat, add the onion puree, stir and let simmer until cooked through for 5 – 7 minutes.
  3. Add the coconut milk, stir in then add water, stir and add the cayenne pepper, salt, stir and let simmer down for 7 minutes.
  4. Add the marinated prawns, garlic, ginger, chopped red chilli, stir and let simmer for 5 minutes.
  5. Prawns coconut peanut soup ready to serve.
