  • 300 ml vegetable oil for plantain for plantain
  • 2 tbsp vegetable oil for frying frittata
  • 2 medium fingers ripe plantain
  • 4 large eggs
  • 1 tssp salt
  • 1 tsp black pepper
  • 1 clove of garlic minced
  • 1 medium green bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 4 medium Burger bun
  • 5 tbsp Mayonnaise
  • 1 bundle of Lettuce
  • 4 4 burger cheddar cheese slices
  • 1 large tomato slice


  • Heat vegetable oil in a pan over medium heat and carefully drop the slice plantain and fry until golden for 7-10 minutes. Take out and set aside to cool
  • Add the salt, black pepper, garlic into the eggs and whisk together
  • Heat vegetable oil in a frying pan and pour the eggs into it, add the fried plantain then the sliced bell peppers
  • Cover and let simmer on low heat for 5-7 minutes and cooked through
  • Take of heat and cut out with a cutter into buns size circles and set aside
  • Cut the buns into half then spread with the mayonnaise
  • Place the lettuce on followed by the cut out frittata, cheddar cheese slice, tomato slice and the other half of the bun
  • Plantain frittata burger ready to be served
