
Plantain Frittata Burger
Can be served as breakfast or afternoon snacks with drinks.

Ingredients
- 300 ml vegetable oil for plantain for plantain
- 2 tbsp vegetable oil for frying frittata
- 2 medium fingers ripe plantain
- 4 large eggs
- 1 tssp salt
- 1 tsp black pepper
- 1 clove of garlic minced
- 1 medium green bell pepper sliced
- 1 medium yellow bell pepper sliced
- 4 medium Burger bun
- 5 tbsp Mayonnaise
- 1 bundle of Lettuce
- 4 4 burger cheddar cheese slices
- 1 large tomato slice
Instructions
- Heat vegetable oil in a pan over medium heat and carefully drop the slice plantain and fry until golden for 7-10 minutes. Take out and set aside to cool
- Add the salt, black pepper, garlic into the eggs and whisk together
- Heat vegetable oil in a frying pan and pour the eggs into it, add the fried plantain then the sliced bell peppers
- Cover and let simmer on low heat for 5-7 minutes and cooked through
- Take of heat and cut out with a cutter into buns size circles and set aside
- Cut the buns into half then spread with the mayonnaise
- Place the lettuce on followed by the cut out frittata, cheddar cheese slice, tomato slice and the other half of the bun
- Plantain frittata burger ready to be served
