Palm Oil Jollof Rice

Spicy Jollof rice prepared with palm oil and can be served with chicken

  • Glass Mixing Bowl
  • Sauce Pan
  • Rubber spatula


  • 2 Cups Rice Washed
  • 100 g smoked herrings
  • 1 medium onion diced
  • 3 cloves of garlic, minced
  • 5 medium tomatoes, chopped
  • 10 scotch bonnet pepper pureèd
  • 2 tbsp fish powder
  • 300 ml beef stock
  • 4 tbsp palm oil
  • A handful of garden eggs leaves gboma
  • tbsp salt


  • Peel and soak the herrings in water for 10 minutes then break into pieces taking out the bones and set aside
  • Heat palm oil in a pan over medium heat, add onion, garlic, stir and let simmer for a minute then add chopped tomatoes, pureèd scotch bonnet pepper, stir and let simmer down for 3 minutes
  • Add fish powder, herrings, stir and let simmer for 2 minutes
  • Add beef stock, stir then add washed rice, salt, stir, cover and let cook for 25 minutes
  • Add sliced garden eggs leaves, stir to mix well with the rice, cover and let wilt for a minute
  • Palm oil jollof rice ready to serve
