
Palm Oil Jollof Rice
Spicy Jollof rice prepared with palm oil and can be served with chicken
Equipment
- Glass Mixing Bowl
- Sauce Pan
- Rubber spatula
Ingredients
- 2 Cups Rice Washed
- 100 g smoked herrings
- 1 medium onion diced
- 3 cloves of garlic, minced
- 5 medium tomatoes, chopped
- 10 scotch bonnet pepper pureèd
- 2 tbsp fish powder
- 300 ml beef stock
- 4 tbsp palm oil
- A handful of garden eggs leaves gboma
- 1½ tbsp salt
Instructions
- Peel and soak the herrings in water for 10 minutes then break into pieces taking out the bones and set aside
- Heat palm oil in a pan over medium heat, add onion, garlic, stir and let simmer for a minute then add chopped tomatoes, pureèd scotch bonnet pepper, stir and let simmer down for 3 minutes
- Add fish powder, herrings, stir and let simmer for 2 minutes
- Add beef stock, stir then add washed rice, salt, stir, cover and let cook for 25 minutes
- Add sliced garden eggs leaves, stir to mix well with the rice, cover and let wilt for a minute
- Palm oil jollof rice ready to serve
