Palm Oil Jollof Rice
Spicy Jollof rice prepared with palm oil and can be served with chicken

- 2 Cups Rice Washed
- 100 g smoked herrings
- 1 medium onion diced
- 3 cloves of garlic, minced
- 5 medium tomatoes, chopped
- 10 scotch bonnet pepper pureèd
- 2 tbsp fish powder
- 300 ml beef stock
- 4 tbsp palm oil
- A handful of garden eggs leaves gboma
- 1½ tbsp salt
Peel and soak the herrings in water for 10 minutes then break into pieces taking out the bones and set aside
Heat palm oil in a pan over medium heat, add onion, garlic, stir and let simmer for a minute then add chopped tomatoes, pureèd scotch bonnet pepper, stir and let simmer down for 3 minutes
Add fish powder, herrings, stir and let simmer for 2 minutes
Add beef stock, stir then add washed rice, salt, stir, cover and let cook for 25 minutes
Add sliced garden eggs leaves, stir to mix well with the rice, cover and let wilt for a minute
Palm oil jollof rice ready to serve
