Jollof Stuffed Whole Grilled Chicken

You don't have to wait for the holidays to serve a special meal... but we waited 🤣Let us show you how simple it is to make this classic jollof stuffed roasted chicken.

  • Blender
  • Baking Tray
  • Small bowl


  • 1 whole chicken
  • 1 cup shallots
  • 1 medium ginger
  • 1 medium bulb of garlic
  • 1 tsp black peppercorn
  • 1 tbsp ground rosemary
  • 1 tbsp paprika
  • 1 tbsp peri peri
  • 1 tbsp soy sauce
  • ½ cup vegetable oil
  • 1 ½ tbsp salt
  • 2 cups par-cooked jollof rice
  • 100 g butter melted


  • Pour shallots into a blender, add ginger, garlic, black peppercorn, ground rosemary, paprika, peri peri, soy sauce, vegetable oil and blend into a smooth paste
  • Wash and tap dry the chicken with paper tissue the pour the blended paste
  • Add salt and rub onto the chicken
  • Cover with aluminium foil and refrigerate overnight
  • Stuffed with par-cooked jollof rice and cover with aluminium foil
  • Bake in a pre-heated oven at 175c for an hour then uncover ,smear with melted butter and bake for 45 minutes
  • Jollof stuffed whole chicken ready to serve


Kid-Friendly Adaptation: Amount of pepper should be reduced when preparing the meal.
