
Jollof Stuffed Whole Grilled Chicken
You don't have to wait for the holidays to serve a special meal... but we waited 🤣Let us show you how simple it is to make this classic jollof stuffed roasted chicken.
Equipment
- Blender
- Baking Tray
- Small bowl
Ingredients
- 1 whole chicken
- 1 cup shallots
- 1 medium ginger
- 1 medium bulb of garlic
- 1 tsp black peppercorn
- 1 tbsp ground rosemary
- 1 tbsp paprika
- 1 tbsp peri peri
- 1 tbsp soy sauce
- ½ cup vegetable oil
- 1 ½ tbsp salt
- 2 cups par-cooked jollof rice
- 100 g butter melted
Instructions
- Pour shallots into a blender, add ginger, garlic, black peppercorn, ground rosemary, paprika, peri peri, soy sauce, vegetable oil and blend into a smooth paste
- Wash and tap dry the chicken with paper tissue the pour the blended paste
- Add salt and rub onto the chicken
- Cover with aluminium foil and refrigerate overnight
- Stuffed with par-cooked jollof rice and cover with aluminium foil
- Bake in a pre-heated oven at 175c for an hour then uncover ,smear with melted butter and bake for 45 minutes
- Jollof stuffed whole chicken ready to serve

Kid-Friendly Adaptation: Amount of pepper should be reduced when preparing the meal.
