
Basil Garlic Baked Fish Fillet With Mashed Potato
Fish fillet baked with basil garlic spice and served with mashed potato mixed with milk and butter mixture.

Ingredients
For the Mashed Potato;
- 100 g Irish Potatoes
- 1 Cup Milk
- 2 Tbsp Butter Unsalted
- 1 Tsp Black Pepper
- 1½ Tsp Salt
For the Fish;
- 1 Large Cassava Fish Fillet
- 2 Tbsp Olive Oil
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 4 Cloves of Garlic Minced
- ¼ Cup Fresh Basil
- A Handful of French Beans
Instructions
- Peel, wash and chop the potatoes into a saucepan over medium heat.
- Add 600ml of water, salt and bring to a boil for 15 minutes.
- Drizzle olive oil on a foil lined pan and place the fillet cassava fish on.
- Season with salt and black pepper, then spread the garlic and basil paste on the fish.
- Place the french beans and drizzle with olive oil.
- Bake in a pre-heated oven at 160 degrees celsius for 15 minutes.
- Heat milk and butter until it starts to boil and take off the heat.
- Mash the potatoes, add the milk mixture, black pepper, salt and mash to mix evenly.
- Mashed potato with basil baked fish ready to serve.
