Chicken Liver Rice

Braised rice prepared with chicken liver and garnished with lemon slice.

  • 3 Tbsp Rice Bran Oil
  • 1 Tsp Fennel Seeds
  • 1 Medium Onion Diced
  • 1 Small Ginger Chopped
  • 2 Cloves of Garlic Minced
  • 200 G Chicken Liver
  • 1 Tsp Ground Black Pepper
  • 1 Tsp Salt
  • 6 Scotch Bonnet Peppers Chopped
  • 1 Tsp Smoked Paprika
  • 6 Fresh Basil leaves
  • 2 Cups Rice
  • 500 ml Water


  • Heat rice bran oil in a pan over medium heat.
  • Add fennel seeds, onion, ginger, garlic, and stir until translucent.
  • Add the chicken liver, black pepper, salt, and stir–fry for 5 minutes. Add smoked paprika, fresh basil and stir.
  • Add the rice, braise for 3 minutes, then add water, adjust salt to your taste and cover and allow it to cook for 25 minutes.
  • Chicken liver rice ready to serve. Garnish with slice of lemon.
