
Pork Jollof Rice
Spicy jollof rice cooked with fried pork and can be served with a glass of juice

Ingredients
- 1 Pound Pork Diced
- 1 Small Red Onion Sliced
- 4 Cloves of Garlic Minced
- 1 Small Ginger Grated
- 1 Tsp Black Pepper
- 1 Tbsp Salt
- 5 Grains of Selim Hwentia
- A Stalk of Fresh Thyme
- A Stalk of Fresh Sage
- 1 Cup Brewed Coffee
- 4 Tbsp Vegetable Oil
- 1 Tsp Fennel Seeds
- 1 Medium Red Onion
- 1 Litre Pork Stock
- 5 Medium Tomatoes Chopped
- 7 Scotch Bonnet Peppers
- 400 g Tomato Paste
- 1 Tbsp Salt
- 2 ½ Cups Long Grain Rice
Instructions
- Pour pork into a saucepan over medium heat, add onion, garlic, ginger, black pepper, salt, grains of selim, fresh thyme, fresh sage, brewed coffee, stir, cover and let simmer for 5 minutes.
- Add water, stir and let boil for 40 minutes or until soft and tender.
- Heat vegetable oil, add cooked pork and fry for 6 minutes, then remove the fried pork and add fennel seeds, onion, stir and let sweat for a minute.
- Then add the pork stock and let simmer.
- Add chopped tomatoes, scotch bonnet pepper, tomato paste, stir and let simmer, then add salt, rice, stir and let cook for 25 minutes.
- Then add the fried pork and let cook for 10 minutes.
- Pork Jollof ready to serve.
