Pork Jollof Rice

Spicy jollof rice cooked with fried pork and can be served with a glass of juice

  • Sauce Pan (2)
  • Wooden Spatula
  • Small bowl


  • 1 Pound Pork Diced
  • 1 Small Red Onion Sliced
  • 4 Cloves of Garlic Minced
  • 1 Small Ginger Grated
  • 1 Tsp Black Pepper
  • 1 Tbsp Salt
  • 5 Grains of Selim Hwentia
  • A Stalk of Fresh Thyme
  • A Stalk of Fresh Sage
  • 1 Cup Brewed Coffee
  • 4 Tbsp Vegetable Oil
  • 1 Tsp Fennel Seeds
  • 1 Medium Red Onion
  • 1 Litre Pork Stock
  • 5 Medium Tomatoes Chopped
  • 7 Scotch Bonnet Peppers
  • 400 g Tomato Paste
  • 1 Tbsp Salt
  • 2 ½ Cups Long Grain Rice


  • Pour pork into a saucepan over medium heat, add onion, garlic, ginger, black pepper, salt, grains of selim, fresh thyme, fresh sage, brewed coffee, stir, cover and let simmer for 5 minutes.
  • Add water, stir and let boil for 40 minutes or until soft and tender.
  • Heat vegetable oil, add cooked pork and fry for 6 minutes, then remove the fried pork and add fennel seeds, onion, stir and let sweat for a minute.
  • Then add the pork stock and let simmer.
  • Add chopped tomatoes, scotch bonnet pepper, tomato paste, stir and let simmer, then add salt, rice, stir and let cook for 25 minutes.
  • Then add the fried pork and let cook for 10 minutes.
  • Pork Jollof ready to serve.
