
Plantain Hash
Deep fried plantain chops in egg coating which can be garnished with meat and served with hot tea.

Ingredients
- 6 fingers of plantain
- 3 egg yolks
- 3 cloves of garlic minced
- 1 tsp paprika
- 1 ½ tsp salt
- 3 eggs for egg wash
- 2 cups seasoned breadcrumbs
- 250 ml vegetable oil
Instructions
- Grate the plantain into a mixing bowl, add egg yolks, garlic, paprika, salt and stir to mix evenly
- Scoop a handful and mold into a golf ball like size
- Coat with the breadcrumbs then dip into the egg wash then coat with the breadcrumbs again
- Carefully place in a heated vegetable oil and fry until golden, take out and place on a kitchen paper towel to drain excess oil
- Plantain hash ready to serve. Serve with baked beans, scrambled eggs, sausages and bacon
