
Fonio Crusted Catfish Balls
Catfish balls made with seasoned fonio and spices

Ingredients
- 1 kg catfish minced
- 3 spring onion chopped
- 1 ½ tsp garlic powder
- 1 tsp cayenne pepper
- 1 tsp roasted thyme & rosemary
- 1 tsp ground black pepper
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 ½ tsp salt
- 1 egg yolk
- ½ cup bread crumps
- 2 egg whites for egg wash
- 800 ml vegetable oil
- 1 cup tomato sauce
- 1 cup fonio (acha)
- 1 tsp smoked paprika
- ½ tsp salt
Instructions
- Add chopped spring onion to the minced catfish in a mixing bowl, add garlic powder, cayenne pepper, roasted thyme & rosemary, black pepper, oregano, smoked paprika and salt, egg yolk, bread crumps, mix and mould into balls and set aside.
- Season the fonio with smoked paprika and salt.
- Season the fonio with smoked paprika and salt.
- Place in frying sieve and carefully place in a heated vegetable oil.
- Fry until golden and crispy for 5-7 minutes
- Catfish balls are ready. Serve with tomato sauce or any sauce of your choice
