
No Oil Catfish Okra Soup
Okra soup prepared with cow hide (hide) and crayfish which can be served with balls of banku.

Ingredients
- 500 g Okra Washed
- 4 Medium Catfish
- 1 Tomato
- 1 Onion
- 7 Scotch Bonnet Peppers Optional
- 4 Cloves of Garlic Optional
- 100 g Cow Hide Wele
- 1 Chunk of Stinky Fish
- 1 Shrimp Seasoning Cube
- Pinch of Salt
Instructions
- On a flat board, slice and cut the okra into pieces and set aside.
- Pour cow hide (wele) tomato, onion, scotch bonnet pepper, stinky fish, shrimp seasoning and salt into a saucepan.
- Add water and bring to a boil for 10 minutes.
- Add smoked catfish and let simmer for 5 minutes.
- Take out cooked tomato, onions, scotch bonnet pepper, garlic, blend and strain onto the fish and let simmer for 5 minutes. Take the fish out and set aside.
- Pour in the chopped okra, add salt, stir and let cook for 7-10 minutes.
- Adjust salt and seasoning to your taste.
- Add back the catfish, stir and let simmer for 3 minutes.
- Okra soup ready to serve on a flat board, slice and cut the okra into pieces and set aside.

- Add water and bring to a boil for 10 minutes.
- Add smoked catfish and let simmer for 5 minutes.
- Take out cooked tomato, onions, scotch bonnet pepper, garlic, blend and strain onto the fish and let simmer for 5 minutes, and take the fish out and set aside.
- Pour in the chopped okra, add salt, stir and let cook for 7-10 minutes.
- Adjust salt and seasoning to your taste.
- Add back the catfish, stir and let simmer for 3 minutes.
- Okra soup ready to serve.
