No Oil Catfish Okra Soup

Okra soup prepared with cow hide (hide) and crayfish which can be served with balls of banku.

Ingredients
  

  • 500 g Okra Washed
  • 4 Medium Catfish
  • 1 Tomato
  • 1 Onion
  • 7 Scotch Bonnet Peppers Optional
  • 4 Cloves of Garlic Optional
  • 100 g Cow Hide Wele
  • 1 Chunk of Stinky Fish
  • 1 Shrimp Seasoning Cube
  • Pinch of Salt

Instructions
 

  • On a flat board, slice and cut the okra into pieces and set aside.
  • Pour cow hide (wele) tomato, onion, scotch bonnet pepper, stinky fish, shrimp seasoning and salt into a saucepan.
  • Add water and bring to a boil for 10 minutes.
  • Add smoked catfish and let simmer for 5 minutes.
  • Take out cooked tomato, onions, scotch bonnet pepper, garlic, blend and strain onto the fish and let simmer for 5 minutes. Take the fish out and set aside.
  • Pour in the chopped okra, add salt, stir and let cook for 7-10 minutes.
  • Adjust salt and seasoning to your taste.
  • Add back the catfish, stir and let simmer for 3 minutes.
  • Okra soup ready to serve on a flat board, slice and cut the okra into pieces and set aside.

  • Okra soup ready to serve.
