In a saucepan over medium heat add in some butter, allow to caramelize and set aside to cool.
In a mixing bowl, pour sugar, egg, 1 egg yolk and mix until well combined.
Pour in the caramelized butter, vanilla essence, flour, tiger nut chaff and baking soda, mix until almost combined.
Add some chocolate chips and mix.
Line a baking tray with a baking sheet and carefully scoop the mixture with an ice cream scoop and place them carefully on the baking sheet.
Carefully space them out to allow the cookies to spread without having to stick with each other.
Top it up with more chocolate chips and pop into a preheated oven at 180 degrees for 11 minutes.
Remove and correct the shape with a round cutter.
Allow to cool down and serve with some tiger nut milk or any other fruit juice of choice.
