BEEF AND GRILLED MANGO SALAD

SERVES 2 - 4 PEOPLE

Ingredients

  • For the Beef;
  • 1 Pound of Beef Fillet
  • 3 Cloves of Garlic (Minced)
  • Fresh Oregano
  • Pinch of Salt
  • Pinch of Black Pepper
  • Olive Oil
  • For the Salad
  • 1 Large Zucchini (Sliced)
  • 1 Large Mango (Sliced)
  • 1 Medium Red Onion (Sliced)
  • 100g Chards Leaves
  • Balsamic Vinegar
  • Olive Oil
  • Chilli Flakes

Directions

  1. Rub the beef with garlic and oregano.
  2. Sprinkle a pinch of salt and black pepper and set aside.
  3. Heat and grease the grill with olive oil, then place the beef on.
  4. Grill on each side for 5 minutes depending on how you like the your meat.
  5. Place the sliced zucchini and mango on the grill and grill for a minute on both sides.
  6. Cut the beef into thin slices and sprinkle with salt and black pepper.
  7. Place the grilled zucchini on the serving plate, add the chards, mango, onion and sliced beef.
  8. Drizzle with balsamic vinegar, olive oil and sprinkle with chilli flakes.
  9. Beef and grilled mango salad ready.
