Toolo Beef (Salted/Cured Beef)
Equipment
- Chopping Board
- Mixing Bowl
- Airtight Container
- Airtight Cover
Ingredients
- 1 kilo of Bone In Brisket
- 1 tsp Red/Pink Food Color
- 1 kg Sea Salt
- 1 tbsp Grain of Selim
- ½ tsp Cloves
- 1 tbsp Black Pepper
- 1 tbsp Dried Rosemary
- 10 Bay Leaves
- ½ cup Water
Instructions
- Place the beef on a chopping board and cut it into chunks.
- Transfer the beef chunks into a mixing bowl.
- Make a solution of red food coloring with water and drizzle it over the beef, stirring until evenly coated.
- Add sea salt, grains of Selim, cloves, black pepper, rosemary, and bay leaves to the beef.
- Mix all the ingredients until well combined.
- Create layers of salt and beef in an airtight container, repeating until you have about 3 layers.
- Cover the container and store it for about a week. Your beef will be ready to use after this time!
