Toolo Beef (Salted/Cured Beef)

Ingredients
  

  • 1 kilo of Bone In Brisket
  • 1 tsp Red/Pink Food Color
  • 1 kg Sea Salt
  • 1 tbsp Grain of Selim
  • ½ tsp Cloves
  • 1 tbsp Black Pepper
  • 1 tbsp Dried Rosemary
  • 10 Bay Leaves
  • ½ cup Water

Equipment

  • Chopping Board
  • Mixing Bowl
  • Airtight Container
  • Airtight Cover

Method
 

  1. Place the beef on a chopping board and cut it into chunks.
  2. Transfer the beef chunks into a mixing bowl.
  3. Make a solution of red food coloring with water and drizzle it over the beef, stirring until evenly coated.
  4. Add sea salt, grains of Selim, cloves, black pepper, rosemary, and bay leaves to the beef.
  5. Mix all the ingredients until well combined.
  6. Create layers of salt and beef in an airtight container, repeating until you have about 3 layers.
  7. Cover the container and store it for about a week. Your beef will be ready to use after this time!
