Pour the snails into a sauce pan over medium heat, add garlic, ginger, salt, water, onion, cover and let cook for 20 minutes then take out the onion and let cook for another 15 minutes
Pour the scotch bonnet pepper into a blender, add the boiled onion, fresh onion, garlic, water and blend into a smooth mixture
Heat vegetable oil in a pan over medium heat, add the cooked snails and stir-fry for 3-5 minutes then add the blended scotch bonnet pepper, stir and let simmer for 5 minutes
Add salt, chopped onion, red bell pepper and stir in. Allow to simmer for a minute and take off the heat
