In a saucepan over medium heat, add some butter and allow it to caramelize. Set it aside to cool.
In a mixing bowl, combine sugar, egg, 1 egg yolk until well mixed.
Add the caramelized butter, vanilla essence, flour, tiger nut chaff, and baking soda. Mix until almost combined.
Add chocolate chips and mix.
Line a baking tray with a baking sheet. Use an ice cream scoop to carefully place the mixture on the baking sheet, spacing them out to allow room for spreading.
Top with more chocolate chips and place in a pre-heated oven at 180 degrees for 11 minutes.
Remove from the oven and use a round cutter to correct the shape.
Allow to cool and serve with tiger nut milk or any other fruit juice of your choice.
