90’s Jollof with Toolo Beef

Ingredients
- 100 ml Vegetable Oil
- 1 kg Toolo Beef
- 1 Onion (sliced)
- 4 tbsp Garlic Purée
- 6 large Tomatoes Diced
- 15 Chopped Mixed Peppers
- 1 tsp Rosemary
- 1 tbsp Curry Powder
- 1 tsp Paprika
- 700 ml Beef Broth
- 1 kg Rice
Instructions
- In a saucepan, place your pre-cured beef (toloo beef), pour water over it, and let it boil for 15 minutes. Transfer the beef to a bowl and set it aside. (Change the water twice to reduce the salt content.)
- In another saucepan, heat oil and sear the beef for 10 minutes, stirring occasionally. Add sliced onions and fry until translucent. Then add garlic paste, ginger paste, diced tomatoes, and scotch bonnet. Let it simmer, stirring occasionally, for 15 minutes or until the tomatoes soften.
- Add beef broth, cover, and let it boil for 5 minutes. Then add washed rice, stir, and let it cook for 30 minutes. After 30 minutes, stir to ensure even cooking.
