Season the lobster with white pepper, dried thyme, curry powder, salt, stir to coat evenly and set aside to marinate
Heat shito olive oil in a saucepan over medium heat, add the onion puree, stir and let simmer down for 7 minutes then add the ginger puree, tomato paste, stir and let simmer for 5-7 minutes
Add the chopped kpakposhito, crayfish powder, stir then add the marinated lobster, stir and let simmer for 3 minutes then take out
Add the washed rice, salt, coconut milk, stir , cover and let cook for 30 minutes
Add the carrots, lobsters, stir in , cover and let cook for 5 minutes
Ginger stew lobster jollof ready to serve
