Ginger Lobster Jollof Rice

So many varieties of jollof we can never get tired of. Yet another one we cannot afford to hide from you, ginger lobster jollof rice... delish!!⁣

Ingredients
  

  • 500 g lobsters chopped
  • 1 tsp white pepper
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 1 tsp salt
  • 100 ml shito olive oil
  • 1 medium onion pureed
  • 100 g ginger pureed
  • 2 tbsp tomato paste
  • 10 kpakposhito chopped
  • 1 tbsp crayfish powder
  • 1 tsp 1 tsp curry powder
  • 2 cups long grain rice washed
  • 1 tbsp salt
  • 1 cup coconut milk
  • 1 large carrot sliced

Instructions
 

  • Season the lobster with white pepper, dried thyme, curry powder, salt, stir to coat evenly and set aside to marinate
  • Heat shito olive oil in a saucepan over medium heat, add the onion puree, stir and let simmer down for 7 minutes then add the ginger puree, tomato paste, stir and let simmer for 5-7 minutes
  • Add the chopped kpakposhito, crayfish powder, stir then add the marinated lobster, stir and let simmer for 3 minutes then take out
  • Add the washed rice, salt, coconut milk, stir , cover and let cook for 30 minutes
  • Add the carrots, lobsters, stir in , cover and let cook for 5 minutes
  • Ginger stew lobster jollof ready to serve
