Pour shallots into a blender, add ginger, garlic, black peppercorn, ground rosemary, paprika, peri peri, soy sauce, vegetable oil and blend into a smooth paste
Wash and tap dry the chicken with paper tissue the pour the blended paste
Add salt and rub onto the chicken
Cover with aluminium foil and refrigerate overnight
Stuffed with par-cooked jollof rice and cover with aluminium foil
Bake in a pre-heated oven at 175c for an hour then uncover ,smear with melted butter and bake for 45 minutes
Jollof stuffed whole chicken ready to serve
