Pour pork into a saucepan over medium heat, add onion, garlic, ginger, black pepper, salt, grains of selim, fresh thyme, fresh sage, brewed coffee, stir, cover and let simmer for 5 minutes.
Add water, stir and let boil for 40 minutes or until soft and tender.
Heat vegetable oil, add cooked pork and fry for 6 minutes, then remove the fried pork and add fennel seeds, onion, stir and let sweat for a minute.
Then add the pork stock and let simmer.
Add chopped tomatoes, scotch bonnet pepper, tomato paste, stir and let simmer, then add salt, rice, stir and let cook for 25 minutes.
Then add the fried pork and let cook for 10 minutes.
Pork Jollof ready to serve.
