Ingredients
1
medium tubers of sweet potatoes
2
small tubers of cocoyam
1
small onion
2
eggs
1
tsp
black pepper
1
tsp
salt
1
tsp
nutmeg
2
cloves of garlic
minced
100
ml
vegetable oil
1
egg for sunny side up
Baked beans
½
tsp
chilli flakes
A handful of parsley
for garnish
Instructions
Grate the sweet potato and cocoyam onto a clean kitchen napkin, grate the onion to reduce moisture
Pour into a mixing bowl, add the eggs, black pepper, salt, nutmeg , garlic and stir into a uniform mixture
Heat vegetable oil in a pan over medium heat and scoop a spoonful into the oil
Fry until golden then flip and fry the other side until golden
Take and place on a kitchen paper to drain excess oil
Stack the hash up and carefully place the sunny side up egg on, scoop a spoonful of baked beans on it, then sprinkle with chilli flakes and parsley
Cocoyam and sweet potato hash ready to serve
