Finely chop half of the prawns and add to the whole prawns in a mixing bowl, then add in some minced garlic, ginger paprika, black pepper, salt and mix all together.
In a pan over high heat pour in some avocado oil, put in the seasoned whole prawns, and sear for 2 minutes then, transfer the prawns to another bowl.
Crack 2 eggs into the same pan and scramble for 2 minutes before adding the minced prawns, stir fry for 1 minute.
Add in diced carrots, and diced onions and continue stir-frying for another minute, proceed by adding broccoli grains, mixed bell peppers, nutmeg, garlic powder, and salt, stir fry for 3 minutes before adding in whole prawns and stir them in.
Loaded shrimp fried rice is ready to serve.
