Blend onion, garlic, anise seeds, and pink peppercorn into a smooth mixture and set aside.
Pour salted beef into a small saucepan over medium heat, add blended mixture, beef seasoning, salt, stir and let cook for 15 minutes, then take from heat.
Blend beetroot, onion, scotch bonnet, pepper and garlic into a smooth mixture.
Heat vegetable oil in a saucepan over medium heat, add fennel seeds, onion, stir and let sweat for 2 minutes.
Add blended beetroot mixture, stir and let simmer down for 5 minutes, then add bay leaves, stir and let simmer.
Add cooked salted beef, stir and let simmer for 2 minutes.
Add washed rice, beef stock, salt, stir and let cook for 25-30 minutes.
Beetroot Jollof rice is ready.
Serve with beetroot and avocado salad.
