We know how you love your cupcakes, so we made a little magic with ripe plantain, without adding flour and the sweetness of the plantain needs no icing .⁣

  • Glass Mixing Bowl
  • Rubber spatula
  • Masher
  • Cupcake Baking Tray
  • Oven


  • 1 tsp fennel seeds
  • 1 tsp grains of paradise
  • 1 tsp cloves
  • 5 African orchid nutmeg
  • 1 tsp chilli flakes
  • 5 ripe plantains chopped
  • 1 spring onion chopped
  • 1 tsp salt
  • 2 tbsp coconut oil
  • 2 tbsp mixed sesame seeds


  • Pour the fennel seeds into a dry blender, add grains of paradise, cloves, African orchid nutmeg, chilli flakes and blend into a smooth mixture and set aside.
  • Mash the ripe plantain, add the blended spice, chopped spring onion, salt, coconut oil and stir in
  • Scoop into a greased muffin pan and sprinkle with sesame seeds
  • Bake in a pre-heated oven at 175c for 35 minutes
  • Spicy plantain cup cakes ready to serve
