
Plantain Cup Cakes
We know how you love your cupcakes, so we made a little magic with ripe plantain, without adding flour and the sweetness of the plantain needs no icing .Every bite of this cupcake is filling!

- Glass Mixing Bowl
- Rubber spatula
- Masher
- Cupcake Baking Tray
- Oven
Ingredients
- 1 tsp fennel seeds
- 1 tsp grains of paradise
- 1 tsp cloves
- 5 African orchid nutmeg
- 1 tsp chilli flakes
- 5 ripe plantains chopped
- 1 spring onion chopped
- 1 tsp salt
- 2 tbsp coconut oil
- 2 tbsp mixed sesame seeds
Instructions
- Pour the fennel seeds into a dry blender, add grains of paradise, cloves, African orchid nutmeg, chilli flakes and blend into a smooth mixture and set aside.
- Mash the ripe plantain, add the blended spice, chopped spring onion, salt, coconut oil and stir in
- Scoop into a greased muffin pan and sprinkle with sesame seeds
- Bake in a pre-heated oven at 175c for 35 minutes
- Spicy plantain cup cakes ready to serve
