Gari mixed with shito and garnished with scrambled eggs and vegetables

  • Wooden Spatula

Ingredients
  

  • For the scrambled eggs:
  • 1 tbsp vegetable oil
  • 3 large eggs
  • ½ tsp black pepper
  • Pinch of salt
  • For the gari;
  • cup gari
  • 1 tsp salt
  • 100 ml water
  • 1 cup coconut oil shito
  • 2 medium mediterranean cucumber diced
  • 1 medium carrot grated
  • 1 medium tomato sliced
  • 1 small onion sliced
  • 1 spring onion, chopped
  • Parsley for garnish

Instructions
 

  • Heat vegetable oil in a pan over medium heat, add the eggs, black pepper and salt.
  • Stir continuously for 3 minutes, take off heat and set aside.
  • Pour the gari into a mixing bowl, add salt, sprinkle water on it and mix until it’s fluffy.
  • Add the coconut oil shito and stir into a uniform mixture.
  • Add the scrambled eggs, diced cucumber, grated carrot, tomato, onion, spring onion and  mix it in.
  • Gari shito mix ready to serve. Garnish with parsley
