Ingredients

  • 700g coconut oil
  • 200g tomato paste
  • 1 large onion, puree
  • 1 bulb of garlic, puree
  • 1 cup blended scotch bonnet pepper
  • ½ cup blended ginger
  • 1 cup coconut flakes
  • 1 tsp ground coriander
  • 1 tsp ground African orchid nutmeg
  • 1 tsp smoked paprika
  • 1 tsp rosemary
  • 1 tbsp salt

Directions

  1. Heat the coconut oil in a saucepan over medium heat, add the tomato paste, stir and let simmer for 5 minutes, add the onion and garlic puree, stir and let simmer down for 8 minutes
  2. Add the blended scotch bonnet pepper, ginger, stir and let simmer for 7 minutes then add the coconut flakes
  3. Add the ground coriander, African orchid nutmeg, smoked paprika, rosemary, salt, stir and let simmer for 20 minutes
  4. Vegan shito ready to serve
