SWEET POTATO BISCUITS

SERVES 4 - 6 PEOPLE

Ingredients

  • 1 Large Tuber of Sweet Potato (Boiled and Mashed)
  • ½ Cup of Milk
  • 100g Butter (Diced)
  • 1 ½ Cups of Soft Flour
  • 2 Tbsp of Sugar
  • 1 Tsp of Nutmeg
  • ½ Tsp of Salt
  • 1 Tsp Baking Powder

Directions

  1. Mix mashed potato with milk and set aside.
  2. In a large bowl, mix flour with sugar, salt, nutmeg and baking powder.
  3. Add the butter and mix with your fingers till you get a crumble-like mixture.
  4. Add the potato mixture into the flour mixture and stir in.
  5. Place on floured surface.
  6. Sprinkle with flour and press the dough down into a disk till it’s about an inch thick.
  7. Cut out into any shade of your choice.
  8. Place on a parchment lined baking tray and brush the top with milk.
  9. Place in a pre-heated oven and bake at 175 degree celsius for 15 minutes.
  10. Take out from the oven and let cool on a rack.
  11. Potato biscuits ready to serve.
