SPICY ABOBI STEW WITH OKRA SOUP

SERVES 4 - 6 PEOPLE


Ingredients

  • For Abobi Stew;
  • 2 Cups of Dried Anchovies (Abobi)
  • 4 Cloves of Garlic (Minced)
  • 1 Medium Onion (Pureèd)
  • 1 Medium Red Onion (Diced)
  • 10 Scotch Bonnet Pepper (Pureèd)
  • 1 Tbsp of Tomato Paste
  • 2 Tbsp of Coconut Oil
  • Salt
  • For Okra;
  • 300g Okra
  • 1 Tsp of Ground African Locust Beans (Dawadawa)

Directions

  1. Pour water on the dry anchovies and soak for 10 minutes.
  2. Wash and rinse the anchovies twice and set aside.
  3. Heat coconut oil in a sauce pan, add garlic, stir, add pureèd onion and let simmer for a minute.
  4. Add pureèd scotch bonnet pepper, stir, add tomato paste, stir and let simmer for 3 minutes.
  5. Add soaked anchovies, stir and let simmer for 3 minutes.
  6. Adjust salt to your taste, then add chopped onions.
  7. Stir and take off heat.
  8. Bring 300ml of water to a boil, add salt, chopped okra, ground African locust beans and let cook for 7 minutes.
  9. Spicy abobi stew and okra soup ready to serve.
