PLANTAIN NACHOS

COOK TIME 3-4 MINUTES

SERVES 6-12


Ingredients

  • 2 cup plantain flour
  • 1 tsp ground nutmeg
  • ½ tsp baking powder
  • 1 tsp salt
  • ½ cup onion puree
  • 4 cloves of garlic, minced
  • 150g margarine
  • 1 litre vegetable oil

Directions

  1. In a mixing bowl add the plantain flour, nutmeg, baking powder, salt and stir in
  2. Add the onion and garlic puree mix in then add the margarine continues mixing till evening combined
  3. Cover with a cling film and let it rest for 30 minutes
  4. Sprinkle some of the plantain flour on a flat surface and on a rolling pin
  5. Take a portion of the dough, place on the board and roll into a thin sheet, cut out with a square cutter then cut across the square into triangle shapes
  6. Carefully place in a heated vegetable oil and fry until golden and crispy or until the chips starts to float on the on the oil for 3-4 minutes. Take out of the oil and place on a paper towel to drain excess oil
  7. Plantain nachos ready to serve. Serve with any dip of your choice
