PLANTAIN MOI MOI

Ingredients

  • 3 cups leftover moi moi mixture
  • 2 small ripe plantain, sliced ½ inch thick
  • 400ml vegetable oil
  • 700ml water for baking/steaming

Directions

  1. Pour the vegetable oil in a pan on medium high heat.
  2. Add plantain slices and fry for 5 minute, take off heat and set aside
  3. Transfer leftover moi moi mixture into a skillet
  4. Carefully place the fried plantain on the moi moi mixture covering the surface entirely
  5. Fill a baking pan with water and place the skillet in it gently
  6. Cover the entire baking pan with an aluminum foil and bake at 180 degrees for 45 minutes
  7. Plantain moi moi ready to serve
