PLANTAIN HASH

Ingredients

  • 6 fingers of plantain
  • 3 egg yolks
  • 3 cloves of garlic, minced
  • 1 tsp paprika
  • 1 ½ tsp salt
  • 3 eggs, for eggwash
  • 2 cups seasoned breadcrumbs
  • 250ml vegetable oil

Directions

  1. Grate the plantain into a mixing bowl, add egg yolks, garlic, paprika, salt and stir to mix evenly
  2. Scoop a handful and mould into a golf ball like size
  3. Coat with the breadcrumbs then dip into the egg wash then coat with the breadcrumbs again
  4. Carefully place in a heated vegetable oil and fry until golden, take out and place on a kitchen paper towel to drain excess oil
  5. Plantain hash ready to serve. Serve with baked beans, scrambled eggs, sausages and bacon
