PLANTAIN CUP CAKES

Ingredients

  • 1 tsp fennel seeds
  • 1 tsp grains of paradise
  • 1 tsp cloves
  • 5 African orchid nutmeg
  • 1 tsp chilli flakes
  • 5 ripe plantains, chopped
  • 1 spring onion, chopped
  • 1 tsp salt
  • 2 tbsp coconut oil
  • 2 tbsp mixed sesame seeds

Directions

  1. Pour the fennel seeds into a dry blender, add grains of paradise, cloves, African orchid nutmeg, chilli flakes and blend into a smooth mixture and set aside.
  2. Mash the ripe plantain, add the blended spice, chopped spring onion, salt, coconut oil and stir in
  3. Scoop into a greased muffin pan and sprinkle with sesame seeds
  4. Bake in a pre-heated oven at 175c for 35 minutes
  5. Spicy plantain cup cakes ready to serve
