PEPPERED SNAILS

Ingredients

  • 7 medium snails, halved
  • 2 cloves of garlic, minced
  • 1 tsp ginger paste
  • 1 ½ tsp salt
  • 500ml water
  • 1 small onion
  • For the sauce
  • 1 ½ cups scotch bonnet pepper
  • 1 medium onion, chopped
  • 5 cloves of garlic
  • ½ cup vegetable oil
  • 1 ½ tsp salt
  • 1 large white onion, chopped
  • 1 medium red bell pepper, chopped

Directions

  1. Pour the snails into a sauce pan over medium heat, add garlic, ginger, salt, water, onion, cover and let cook for 20 minutes then take out the onion and let cook for another 15 minutes
  2. Pour the scotch bonnet pepper into a blender, add the boiled onion, fresh onion, garlic, water and blend into a smooth mixture
  3. Heat vegetable oil in a pan over medium heat, add the cooked snails and stir-fry for 3-5 minutes then add the blended scotch bonnet pepper, stir and let simmer for 5 minutes
  4. Add salt, chopped onion, red bell pepper and stir in. Allow to simmer for a minute and take off the heat
  5. Peppered snails ready to serve
