GINGER LOBSTER JOLLOF RICE

Ingredients

  • 500g lobsters, chopped
  • 1 tsp white pepper
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 1 tsp salt
  • 100ml shito olive oil
  • 1 medium onion, pureed
  • 100g ginger, pureed
  • 2 tbsp tomato paste
  • 10 kpakposhito, chopped
  • 1 tbsp crayfish powder
  • 1 tsp curry powder
  • 2 cups long grain rice, washed
  • 1 tbsp salt
  • 1 cup coconut milk
  • 1 large carrot, sliced

Directions

  1. Season the lobster with white pepper, dried thyme, curry powder, salt, stir to coat evenly and set aside to marinate
  2. Heat shito olive oil in a saucepan over medium heat, add the onion puree, stir and let simmer down for 7 minutes then add the ginger puree, tomato paste, stir and let simmer for 5-7 minutes
  3. Add the chopped kpakposhito, crayfish powder, stir then add the marinated lobster, stir and let simmer for 3 minutes then take out
  4. Add the washed rice, salt, coconut milk, stir , cover and let cook for 30 minutes
  5. Add the carrots, lobsters, stir in , cover and let cook for 5 minutes
  6. Ginger stew lobster jollof ready to serve
