DAWADAWA CHICKEN CURRY

Ingredients

  • ΒΌ cup groundnut oil
  • 100g chicken breast, shredded
  • 1 tsp ground coriander
  • 1 tsp cayenne pepper
  • 1 tsp white pepper
  • 1 tsp turmeric
  • 1 tsp ground African orchid nutmeg
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 25g locust beans, washed
  • 2 cups coconut milk
  • 4 dried chilli
  • 50g Swiss chard, chopped
  • 1 tsp freshly ground black pepper
  • 1 tsp salt

Directions

  1. Heat groundnut oil in a pan over medium heat, add ground coriander, cayenne pepper, white pepper, turmeric, ground African orchid nutmeg, garlic, salt, stir and let simmer for 3 minutes
  2. Add the locust beans, coconut milk, dried chilli , stir and let simmer for 5 minutes then add the chopped Swiss chard, stir and let simmer for 3 minutes
  3. Add the freshly ground black pepper, salt, stir and let simmer for a minute
  4. Dawa dawa chicken curry ready to serve
