COCONUT PUFF PUFF

PREP TIME 35 MINUTES

COOK TIME 10 MINUTES

SERVES 4 - 8 PEOPLE


Ingredients

  • 2 ½ Cups All-purpose Flour
  • 1 Cup Grated Coconut
  • ¾ Cup sugar
  • ½ Tsp Salt
  • 1 Tsp Ground Nutmeg
  • 1 Tbs Instant Yeast
  • 400g Coconut Milk
  • 800ml Vegetable Oil (For Frying)
  • ¼ Cup Icing Sugar

Directions

  1. Mix all the dry ingredients together.
  2. Add the warm coconut milk, stir in to get a smooth mixture, then cover with cling film.
  3. Let sit to rise for 30 minutes in a warm place.
  4. Take the cling film off and beat the mixture down.
  5. Scoop with your hands and carefully drop in heated vegetable oil.
  6. Fry until golden for 5 -7 minutes.
  7. Take out from the oil and place on kitchen paper towel to drain excess oil.
  8. Sprinkle icing sugar on top.
  9. Coconut puff puff ready to serve.
